A hot fish dish that will boost your immune system and help you loose weight
We all love spicy food, but did you no that recent studies have showed that spicy food can help us keep our immune system in shape? Spicy food will also increase our metabolism, thereby making it easier for us to burn the calories we eat. The next time you want to do something nice for your body, why not try this delicious tilapia recipe ? Start by halving 4 small new potatoes and cutting 2 small sweet potatoes into 3 cm pieces. Cook the potatoes together. Pour 2 dl of coconut milk into a large pan and bring to a boil. Continue to boil while stirring occasionally until it has reduced down to roughly 1 dl and the oil has separated from the coconut milk. Stir in 2 tablespoons of yellow curry paste and cook for another minute. Add more coconut milk to the mixture, about 2 dl, together with ½ dl of fish stock, 1 tablespoon of lime juice, 1 teaspoon of dark brown sugar, ½ teaspoon of maple syrup, and ½ teaspoon of molasses. (You can use vegetable stock if you want to make a veggie dish). Slice 1 stalk of lemongrass into thin slices and add to the pan. Cook while stirring until the sugar has dissolved. Cut 800 grams of tilapia fillets into pieces. Thinly slice 3 green onions. Chop coriander coarsely until you have 1/3 cup. Remove the seeds from 1 long red Thai chili and slice the fruit into thin slices. Add the cooked potatoes to the pan together with chopped tilapia fillets and cook for 3 minutes (stir occasionally). Remove the lemon grass from the dish. Add chopped green onions and 1 tablespoon of fresh coriander leaves. Stir and pour the fish into serving bowls. Use the slices Thai chili to decorate the dish and spice it up even more. Bon appetite!
